The secret isn’t fancy ingredients — it’s temperature and texture.

🧊 Keep everything cold. Cold vegan butter = visible layers = flaky crust. If your kitchen runs warm, pop your flour and butter in the fridge for 10 minutes before mixing. Put ice cubes in your water.
🌿 Don’t overwork the dough. You want little pockets of butter — not a smooth ball. Mix until just combined, then chill again before rolling.
🌡️ Bake hot. Start your pie at 425°F for 15–20 minutes to set those flaky layers, then lower to 350°F to finish.
