The autumn days are getting shorter and colder and all I want is comfort foods. A big stack of fluffy pancakes with maple syrup is definitely at the top of the list. So naturally, I made it into a cookie, introducing the Vegan Maple Brown Sugar Cookies! They’re full of flavor, chewy with crispy edges and topped with a buttery maple icing. These are so delicious, they taste just like a stack of buttery, maple drenched pancakes. Everyone loves these cookies! Perfect for a holiday cookie box!

I am a bit obsessed with these vegan maple brown sugar cookies. They are SO flavorful and only use pure, real maple syrup — no extracts! Certain extracts can really make or break a recipe introducing an artificial taste that I don’t want any part of. I strive to use all natural and pure flavors in all of my recipes. Pure maple syrup packs a punch on its own and in this recipe, really shines thru in a big way. The ultra buttery maple icing is so delicious and puts these cookies over the top.

These vegan maple brown sugar cookies would be a great addition to a cookie exchange, holiday cookie box or any get together really! This recipe makes a lot of cookies but they go fast, trust me on this. You can’t have just one.

Ingredients for Vegan Maple Brown Sugar Cookies

  • All Purpose Flour — All Purpose Flour is the structure of this cookie.
  • Baking Soda — Baking Soda gives the cookie lift.
  • Vegan Butter — Vegan Butter provides flavor and contributes to the crisp edges.
  • Brown Sugar — For the ultimate chewy texture and flavor use dark brown sugar.
  • Golden Flax — Ground golden flax contributes to the structure and integrity of the cookie.
  • Pure Maple Syrup — Be sure to use real, pure good quality Maple Syrup. It is the star of the show!
  • Powdered Sugar — For the amazing buttery maple icing.
  • Vanilla Extract + Sea Salt — Enhances flavor and adds depth.

The Best Maple Syrup

This is a highly contested topic among syrup makers but ultimately what you need to look for is a 100% Pure Maple Syrup. Not the breakfast syrup filled with garbage, you want the real deal Maple Syrup. A little bit goes a long way and it is SO worth it for that amazing flavor. As far as Grade A or B, you can’t go wrong here. I used a Grade A and it was perfect. The Grade B maple syrup is a bit darker, more robust and produced later in the season. I’m sure it would be delicious is these cookies as well.

How to Make Vegan Maple Brown Sugar Cookies

Just 10 minutes to put the cookie dough together. There is a 2 hour chill time to set the dough for baking. Next, portion cookies and bake. The buttery maple icing is gently cooked on the stove top for just a minute. Drizzle or spread over the tops of the cookies. The icing takes about 1 hour to fully set up.

Whisk the all purpose flour, baking soda and sea salt together. In a small bowl combine the ground flax and 3Tbs water.

    Cream the vegan butter and dark brown sugar together until fully incorporated.

    Add in the flax mixture, pure maple syrup and vanilla extract. Mix well.

    Mix in the dry ingredients just until the dough comes together with no dry spots. Chill the cookie dough for 2 hours. The maple syrup needs time to set up or the cookies will spread.

    Portion cookie dough into about 1.5 Tbs balls.

    Bake for 12-13 minutes or until edges start to turn golden brown.

    Spread or drizzle with Maple Icing. The icing takes about 1 hour to set.

    Vegan Maple Brown Sugar Cookies

    These little cookies taste just like a fluffy stack of pancakes! Using only pure maple syrup is the key to getting the outstanding and delicious maple flavor. Perfect cozy afternoon snack. These would be a great addition to a Holiday cookie box!

    Ingredients

    Maple Cookie Dough:

    • 2 ⅓ C (291g) All Purpose Flour
    • 1 tsp Baking Soda
    • 1/2 tsp Sea Salt
    • 1/2 C (115g) Vegan Butter
    • 1 C (200g) Dark Brown Sugar
    • 1 Tbs Golden Flax ground
    • 1/3 C (80mL) Pure Maple Syrup
    • 1 tsp Vanilla Extract

    Maple Icing

    • 2 Tbs (30g) Vegan Butter
    • 1/3 C (80mL) Pure Maple Syrup
    • 1 C (112g) Powdered Sugar sifted
    • Pinch Sea Salt

    Instructions

    Make the Maple Cookie Dough:

    • In a medium bowl whisk together the all purpose flour, baking soda and sea salt.
    • In a small bowl combine the 1 Tbs ground golden flax with 3 Tbs of filtered water. Use a fork to whisk together and set aside.
    • Combine the vegan butter and dark brown sugar in a mixing bowl and using the paddle attachment mix until completely incorporated.
    • Scrape the bottom of the mixing bowl with a spatula to make sure the butter is fully mixed in and add in the flax mixture, maple syrup and the vanilla extract. Mix until combined.
    • Now add in the flour mixture and mix on low just until no flour bits are remaining. Make sure to use a spatula to get anything at the bottom of the bowl.
    • Wrap up dough and chill in fridge for at least 2 hours.

    Bake the Maple Cookies:

    • Preheat oven 350℉. Line two baking pans with parchment paper.
    • Using a small cookie scoop (about 1½ Tbs) portion 9 cookies per pan. Bake for 12-13 minutes or until the edges lightly brown.
    • Cool cookies on pan for 5 minutes before transferring to a cooling rack.
    • Once cookies have cooled completely it's time for the maple icing topping.

    Make the Maple Icing:

    • In a small pan on the stove on low, melt together the vegan butter and maple syrup.
    • Remove from heat. Whisk in the the sifted powdered sugar until completely combined. Add a pinch of sea salt.
    • Drizzle or use a small offset spatula to ice each cookie. The icing takes about 1 hr to set.
    • Serve and enjoy! Cookies stay fresh covered at room temperature for about 1 week. If they even last that long!
