Apple Cider Harvest Loaf

Ingredients

Harvest Loaf

  • 300 g (2 c) All Purpose Flour
  • 2 tsp Baking Powder
  • 1 ½ tsp Cinnamon
  • ½ tsp Nutmeg
  • ¼ tsp Clove
  • ¼ tsp Salt
  • 124 g (½ c) Apple Cider
  • 113 g (½ c) Applesauce
  • 139 g (¾ c) Brown Sugar
  • 113 g (½ c) Vegan Butter melted
  • 1 tsp Vanilla Extract
  • 1 medium Apple shredded

Glaze

  • 120 g (1 c) Powdered Sugar
  • 2 Tbs Pure Maple Syrup
  • 1-2 Tbs Almond Milk

Instructions

  • Prepare your space. Preheat the oven to 350℉. Grease a 9x5 loaf pan and set aside.
  • Mix the dry ingredients. In a medium bowl, whisk together the flour, baking powder, spices and salt.
  • Vegan butter + sugar. Combine melted vegan butter and brown sugar in a large mixing bowl. Add in applesauce and vanilla.
  • Combine + fold. Alternate adding in dry ingredients and apple cider in two additions each, until just combined. Fold in shredded apple. Don’t overmix.
  • Bake. Pour batter into prepared pan and smooth the top. Bake for 50-55 minutes, until a toothpick comes out clean. Cool in pan for 30 minutes, then transfer to a rack.
  • Glaze with magic. Whisk together powdered sugar, maple syrup and almond milk until smooth. Drizzle over the cooled loaf.
